Vegetable Stew
Serves 2-3
  • 1” piece of ginger, finely chopped
  • 1-2 green chillies, finely chopped
  • 15-20 curry leaves
  • 1 large potato, diced
  • 1 carrot, diced
  • ½ cup cauliflower florets
  • ¼ cup peas
  • ¼ cup chopped beans
  • 400ml coconut milk
  • Note: You can add or substitute the vegetables as per your preference. About 2 cups of vegetables is good for 2-3 servings.
